Angie'S Apple Cake
- t Eggs
- t/3 cup orange juice
- t cup salad oil (any kind)
- t tsp. vanilla
- t cups flour
- t 1/2 cups sugar
- t tsp. baking powder
- t good size apples peeled & sliced thick
- t tsp. cinnamon
- t Tbsp. sugar
- Mix the 1 tsp. cinnamon & 2 tsps. of sugar, put aside to sprinkle on batter. Put into a large mixing bowl, the eggs, beat, then add the orange juice, oil & vanilla, add the flour, sugar and baking powder. Beat at medium speed for ten minutes. Pour part of the batter into a greased tube pan; put the apples slices on the batter; then sprinkle the cinnamon/sugar mixture over this. Repeat again, until all the batter is used. The top will have the apples and cinnamon/sugar mixture on it. Bake for 60-70 minutes at 350u0b0F. Test with a toothpick, so you'll know when the cake is done; although you'll be able to tell. (I usually double this recipe as the cake goes quickly.) Do Not over-bake.
