Cold Noodles With Spicy Sauce
- 3 whole chicken breasts
- 4 oz. fine egg noodles
- 1 tsp. plus 1 Tbsp. sesame oil
- 1/4 c. sesame paste
- 3 Tbsp. brewed tea
- 2 Tbsp. hot oil
- 3 Tbsp. soy sauce
- 3 Tbsp. red wine vinegar
- 1/4 c. peanut, vegetable or corn oil
- 2 Tbsp. chopped garlic
- In large saucepan, bring about 6 cups of water to a boil and simmer chicken about 10 to 15 minutes.
- Do not overcook or meat will be dry.
- Remove chicken breasts but leave water in pot.
- Bring water to a boil again.
- Do not add salt.
- Add noodles and cook, stirring occasionally, until they are tender, 7 minutes or less. Drain in a colander and run under cold water until they are thoroughly chilled and the strands are separated.
- Drain.
- Sprinkle with teaspoon of sesame oil and toss to coat.
- Set aside.
