Cold Noodles With Spicy Sauce

  1. In large saucepan, bring about 6 cups of water to a boil and simmer chicken about 10 to 15 minutes.
  2. Do not overcook or meat will be dry.
  3. Remove chicken breasts but leave water in pot.
  4. Bring water to a boil again.
  5. Do not add salt.
  6. Add noodles and cook, stirring occasionally, until they are tender, 7 minutes or less. Drain in a colander and run under cold water until they are thoroughly chilled and the strands are separated.
  7. Drain.
  8. Sprinkle with teaspoon of sesame oil and toss to coat.
  9. Set aside.
