Pumpking & Ginger Muffins

  1. Preheat oven to 350 degrees farenheit.
  2. Mix pumpkin, sugar, oil, and applesauce in large bowl. Add egg and egg white. Beat until smooth. Stir in juice. Mix dry ingredients in separate bowl. Gradually add this to thetumpkin mixture. Fold in chopped ginger. Fill muffin tins 2/3 full and bake for ~25 minutes or until toothpick comes out clean.
