Chow Chow (Penn Dutch)
- 1 VEGETABLES
- 8 cups Green Beans cut in bite size pieces
- 2 pounds Carrots peeled and cut in 1.2 inch slices
- 1 bunch Celery cut in 1/2 inch slices
- 6 cups Cucumbers cut in 1/2 inch slices, if large then cit slices in half
- 1 head Cauliflowercut in bite sized pieces
- 2 cans Kidney Beans drained and rinsed, 15 ounce
- 1 teaspoon Salt
- 6 cups PICKLING LIQUID
- 2 cups Water
- 2 cups Cider Vinegar
- 2 cups Sugar
- 1 teaspoon Salt
- 1 teaspoon Celery Seeds
- 1. Cook green beans, carrots, celery, and cauliflower in separate pots till just fork tender. They should still be a bit crunchy!!DO NOT cook them together!
- 2. After veggies are all cooked, mix together in a large bowl with cucumbers and kidney beans.
- 3. Fill jars with the mix.
- 4. Mmix liquid ingredients together and heat until sugar dissolves.
