Macaroni & Cheese
- sauce:
- 2 tablespoons butter
- 1 clove garlic, chopped (optional)
- 2 tablespoons flour
- 1.25 cup heated milk
- salt, pepper & cayenne
- 1/2 cup grated cheese (sharp cheddar, mix of cheddar & colby, whatever you want)
- dish:
- 1/2 pound cooked macarroni (or spirals, shells, etc.)
- a bunch of brocoli, chopped into florets & steamed (optional)
- 1/2 cup grated cheese
- 1/2 cup bread crumbs
- While cooking the macarroni & brocoli (if wanted), make the cheese sauce.
- Preheat oven to 375 F. Butter a 1.5 quart caserole dish (bigger if adding brocoli).
- In a small sauce pan, melt the butter. Add the garlic if desired. Stir in the flour and stir until it makes a paste (but don't let it become brown!).
- Add milk (make sure its warm!) slowly and mix until entire sauce is smooth and thick.
- Add the cheese & cayenne. Stir until all the cheese has melted. Add salt & pepper if needed.
- Mix the sauce with the pasta & brocoli (if wanted). Pour mix into caserole dish. Sprinkle cheese over the top. Sprinkle the bread crumbs over the cheese.
- Bake for 30 minutes.
