Asparagus Ham Dinner
- 2 c. uncooked rotini noodles
- 3/4 lb. fresh asparagus, cut into 1 inch pieces
- 1 medium sweet yellow bell pepper, julienned
- 2 medium sweet red bell peppers, julienned
- 1 Tbsp. olive oil
- 1 c. diced fresh tomatoes
- 6 oz. fully cooked ham, chopped
- 1/4 c. minced fresh parsley
- 1/2 tsp. salt
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1/8 to 1/4 tsp. cayenne pepper
- 1/4 c. shredded Parmesan or Swiss cheese
- Cook pasta according to package directions. Meanwhile in a non-stick skillet; saute asparagus, yellow and red bell peppers in oil until tender. Add tomatoes and ham; heat thoroughly. Drain pasta, add to vegetable mixture. Stir in seasonings. Sprinkle with cheese.
