Dan Dan Noodles
- Meat
- 1 lb ground beef
- 1 tsp minced garlic
- 2 tsp minced ginger
- 2 spring onions, chopped
- 1 tbsp Chinese rice wine
- Sauce
- 3 tbsp sesame paste
- 1 1/2 tbsp sesame oil
- 3 tbsp black rice vinegar
- 3 tbsp soy sauce
- 1 tbsp roasted Szechuan peppercorn, coarsely ground
- 3 tsp hot chili oil
- 1 cup chicken broth
- 200g dried noodles
- Garnish:
- roasted peanuts
- spring onions
- Meat
- Dry fry the meat, garlic, ginger. Add the spring onion and red pepper when the meat releases liquid. Fry till crispy, deglaze with wine.
- Sauce
- Mix all ingredients
- Toss cooked noodles with sauce and put meat, peanuts, spring onions on top.
