Carrot Cake
- 3 C.grated carrots
- 1 1/2 C.salad oil
- 2 C.sugar
- 1/2 C.chopped pecans
- 4 eggs
- 2 C.plain flour
- 2 tsp.soda
- 2 tsp.baking powder
- 1 tsp.salt
- 2 tsp.cinnamon
- ICING
- 1 8-oz. pkg cream cheese
- 1 stick butter, melted
- 1 box sifted confectioners' sugar
- 1 C.chopped pecans
- 2 tsp.Vanilla
- Mix together carrots, salad oil, sugar and pecans. Add eggs, one at a time, beating well after each addition. Add gradually flour, soda, baking powder, salt and cinnamon, which have been sifted together. Bake in 3 well-greased and floured pans at 350 degrees for about 1 hour or until done.
- Icing
- Mix together and spread between layers and on top of cake.
