Slow Cooker Peach Cobbler

  1. 1. Place peaches in slow cooker and add apple butter, brown sugar, bourbon (if using) and salt.
  2. 2. Stir together until peaches are evenly coated and then spread out into an even layer.
  3. 3. In a large bowl, combine baking mix, sugar and cinnamon, and stir together.
  4. 4. Pour in milk and melted butter and mix until just incorporated.
  5. 5. Drop large spoonfuls of batter onto peaches, making sure to cover the entire surface.
  6. 6. Top slow cooker with a paper towel and cover with lid. (This makes sure moisture is absorbed, so crust topping can actually crisp up.)
  7. 7. Turn on HIGH and cook for about 5 hours (or on LOW for 8), or until crust is golden brown and toothpick inserted in center comes out clean.
  8. 8. Uncover and serve hot with whipped cream or ice cream.
