Slow Cooker Peach Cobbler
- a 3 pounds fresh or frozen peaches, peeled (if fresh) and sliced
- a 1/2 cup apple butter
- a 1/4 cup brown sugar
- a 1/4 cup bourbon, optional
- a 1/4 teaspoon salt
- a 2 cups homemade baking mix (or use store-bought)
- a 2/3 cup whole milk
- a 1/2 cup sugar
- a 1/4 cup (1/2 stick) unsalted butter, melted
- a 1 1/2 teaspoon cinnamon
- 1. Place peaches in slow cooker and add apple butter, brown sugar, bourbon (if using) and salt.
- 2. Stir together until peaches are evenly coated and then spread out into an even layer.
- 3. In a large bowl, combine baking mix, sugar and cinnamon, and stir together.
- 4. Pour in milk and melted butter and mix until just incorporated.
- 5. Drop large spoonfuls of batter onto peaches, making sure to cover the entire surface.
- 6. Top slow cooker with a paper towel and cover with lid. (This makes sure moisture is absorbed, so crust topping can actually crisp up.)
- 7. Turn on HIGH and cook for about 5 hours (or on LOW for 8), or until crust is golden brown and toothpick inserted in center comes out clean.
- 8. Uncover and serve hot with whipped cream or ice cream.
