Apricot Nut Bread

  1. Soak apricots in water to cover for 30 minutes.
  2. Drain and chop.
  3. Cream butter and sugar.
  4. Beat eggs and add alternately to butter mixture with orange juice.
  5. Add dry ingredients.
  6. Add apricots, orange rind and nuts.
  7. Pour into greased 9 x 5-inch loaf pan, lined with greased foil, brown or wax paper.
  8. Bake at 350u0b0 for 1 1/4 hours.
  9. This bread is delicious toasted, buttered and served with coffee.
  10. Freezes well!
