Beanless Chilli
- 3.5 to 4 lbs beef sirloin or stew meat, and or pork cubes
- Salt
- Black pepper
- Red Pepper
- 1 tbs Olive oil
- 1 large vidalia onion chopped
- 1 green, 1 red pepper chopped
- 2 medium jalapeno peppers
- chopped garlic (optional)
- 1 can Lager (optional)
- 4 cups beef broth
- 28 oz crushed/whole tomatoes
- 2 bay leaves (optional)
- 1 cinnamon stick (2.5 to 3")
- 2+ tbs ground ancho chile
- (sub in chili powder)
- 2 tsp ground cumin
- 1.5 tbs brown sugar
- Saute the onions, peppers, and garlic in oil ... remove. Brown meat, add spices, salt & pepper. With the meat good and brown, add in the beer and cook on high for ~ 10 minutes. Toss in pepper mix. Add tomatoes, broth and other ingredients. Simmer for ~ 2 hours.
