Fruit And Oat Bran Muffins
- 1 1/4 c. whole wheat flour
- 1 c. oat bran
- 1/3 c. packed brown sugar
- 2 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground cinnamon
- 1 c. buttermilk
- 2 egg whites
- 2 Tbsp. cooking oil
- 3/4 c. shredded apple, applesauce or mashed ripe banana
- 1/2 c. raisins
- nonstick spray
- In medium bowl, stir together all dry ingredients and spices. Set aside.
- In a small bowl, combine buttermilk, egg whites and oil.
- Add to dry ingredients; stir just until moistened.
- Stir in fruit; mix and add raisins.
- To bake, spray muffin cups with nonstick spray coating.
- Spoon about 1/4 cup batter into each muffin cup.
- Bake at 375u0b0 for 18 to 20 minutes.
- Makes 12 muffins. These muffins freeze well.
