Orzo And Sausage Skillet
- 1 cuptncooked orzo pasta
- 2 packages (13 ounces)tully cooked smoked hardwood chicken sausage
- 3 teaspoonstlive oil, divided
- 1 smalltnion, chopped
- 3 clovestarlic, minced
- 1/4 cupthicken broth
- 1 can (14.5 ounces)tetite diced tomatoes
- 2 tablespoonstresh parsley, minced
- 1/2 teaspoontried oregano
- 1/2 teaspoontried or fresh basil
- 1/4 teaspoontrushed red pepper flakes
- 1/4 teaspoontepper
- 1 cupteta cheese, crumbled
- Cook pasta according to package directions.
- Heat 2 teaspoons olive oil in a large skillet on medium heat. Brown the sausage. Set aside and keep warm.
- In the same pan, saute onion in remaining oil (if needed) until tender. Add garlic and broth; cook 1 minute longer, stirring to loosen browned bits from pan.
- Stir in the tomatoes, oregano, basil, pepper flakes and pepper, cook for a few minutes.
- Remove from the heat and stir in the orzo, sausage and feta.
