Spicy Apple Cake
- 1 c. raisins
- 1 c. pecan halves
- 2 large eggs
- 1 1/2 c. granulated sugar
- 1 tsp. baking powder
- 1 tsp. freshly grated lemon peel
- 3 medium Golden Delicious apples (1 1/4 lb.)
- 1/3 c. bourbon or apple juice
- 1 3/4 c. all-purpose flour
- 2/3 c. vegetable oil
- 3/4 tsp. baking soda
- 2 tsp. pumpkin pie spice or 1/2 tsp. ground cinnamon, 1/4 tsp. ground nutmeg, 1/8 tsp. ginger and 1/8 tsp. allspice
- Peel, core and dice apples (3 cups).
- In a small bowl, soak raisins in bourbon or juice for 30 minutes.
- Heat oven to 400u0b0. Grease and flour a 10-inch spring-form pan.
- Spread 1 cup of pecans on a cookie sheet.
- Bake 5 minutes or until fragrant and toasted.
- Remove from oven and reduce temperature to 375u0b0.
- Chop pecans coarsely.
