Minestrone Soup
- 6 c. water
- 2 large cans whole tomatoes
- 1/2 c. celery
- 2 c. carrots
- 4 medium potatoes, cubed
- 1 large onion, chopped
- 2 tsp. salt
- 1 tsp. sugar
- 1 tsp. black pepper
- 1 lb. ground beef
- 1 lb. ground pork
- 2 eggs
- 1/2 c. bread crumbs
- 2 tsp. salt
- dash of pepper
- 2 cans cut green beans, strained
- 1 can whole kernel corn, strained
- Put first 9 ingredients in large pot and put on stove to simmer.
- While pot is simmering, prepare the following:
- Mix together ground beef and pork, eggs, bread crumbs, salt and pepper. Roll into small 1-inch meatballs; add to boiling pot on stove. Simmer 30 minutes, then add green beans and corn.
- Simmer another 10 minutes.
