Mexican Meatloaf With Lime And Chipotle Tabasco Sauce
- 1 1/2 lbs ground beef
- 6 oz chorizo ground
- 1 1/2 cups oatmeal
- 2 eggs
- 1/2 cup milk
- 1/2 cup chipotle sauce
- 2 tbsp chipotle chili powder
- 1 1/2 tbsp cumin powdered
- 1 1/2 tbsp cilantro dried
- 1 tsp Worcestershire sauce
- 1 tbsp chipotle tabasco sauce
- 1 tsp lime juice
- 3 jalapenos canned; minced
- 1/4 cup onion minced
- 1/4 cup red pepper minced
- 1 pinch salt
- 1 pinch pepper
- 2 oz salsa casera canned
- 1. Preheat oven to 350 F.
- 2. Mix all ingredients except salsa casera together in a large mixing bowl
- 3. Pour mixed ingredients into a greased/oiled 9" loaf pan (I prefer to spray it with olive oil). Lightly press mixture into pan and level the top with a spatula.
- 4. Spread salsa casera over the top.
- 5. Bake for 1hr - 1h15m
