Asian Style Cold Soba Noodles With Cucumber Cashew Salad
- salt
- 3 garlic cloves.minced
- 3 TBLS finely chopped, peeled fresh ginger
- 4 scallions (white and green parts), thinly sliced
- 1/2 cup peanut butter
- 1/4 cup tahini
- 2 tsps chinese chile paste
- 1/4 cup soy sauce
- 1/4 cup minced fresh cilantro leaves
- one 8.8oz pkg sob noodles ( japanese buckwheat pasta)
- 1 lg european cucumber, cubed (abt 3 cups)
- 3/4 cup coarselt chopped lightly salted cashews
- 2 TBSP asian sesame oil
- 2 TBSP rice wine vinegar(or white wine vinegar)
- pepper
- Boil pot of water
- For sauce: mix garlic, ginger, and scallions. Mix in tahini and peanut butter. Add the chile paste and soy sauce and mix well.Add 1/2 cup hot or almost boiling water from pot of water and stir into the sauce. Stir in cilantro.
- SALAD: in a small bowl, mix cuckes, cashews,sesame oil and vinegar and season with pepper. Set aside.
- Add noodles to pot of boiling water and stir well. Cook for abt 6 minutes or until just tender. Drain in colander and place under cold running water. Toss noodles until they are chilled. Drain again.
- Toss the noodles with the peanut butter sauce making sure noodles are well coated.
- To serve, place noodles on large serving plate and surround with cucumber and cashew salad.
