Tamale Loaf
- 2 Tbsp. oil
- 1 large onion, chopped
- 1 clove garlic, minced
- 1 small green pepper, chopped
- 1 c. chopped celery
- 1 lb. ground beef
- 2 tsp. salt
- 1 Tbsp. chili powder
- 1 (No. 2 1/2) can (3 1/2 c.) tomatoes
- 1 c. yellow cornmeal
- 1 c. milk
- 1 (No. 2) can cream style corn (2 c.)
- 1/2 c. grated American cheese
- pitted ripe olives (may omit)
- Preheat oven to 325u0b0.
- Cook onion, garlic, green pepper and celery in oil for 5 minutes.
- Add ground meat and cook for 15 minutes longer, stirring constantly.
- Add cream style corn.
- Mix cornmeal with milk and stir into mixture.
- Cook for 15 minutes longer, stirring constantly.
- Add cream style corn.
- Pour into greased pan, top with grated cheese and decorate with olives.
- Bake in preheated oven for 1 hour.
