Creamy Potato & Ham
- 3 lb potatoes, sliced
- 1 medium onion, chopped
- 1 tsp olive oil
- 2 cloves garlic, chopped
- 3 Tbsp flour
- 1/2 cup dry white wine
- 3 Tbs butter
- 1/2 pint heavy cream
- 3 oz cream cheese
- 3 oz parmesan cheese
- 3 oz pecorino romano cheese
- 4 oz montery jack cheese
- 1 lb ham, chopped into large pieces
- 1 tsp nutmeg
- 1 tsp black pepper
- 2 tsp salt
- 1/4 cup fresh parsley, chopped
- Preheat oven to 400 degrees. Butter a 9x13 pan with 1 Tbs of butter. Cook onions and olive oil over medium heat 5-8 minutes until onions become translucent. Add garlic, wine and butter, then sprinkle in flour. Whisk together and continue cooking for about 3 minutes, until mixture begins to thicken. Add cream and cream cheese until blended then remove from heat.
- Grate cheese into a large bowl and toss with black pepper, salt and nutmeg.
- Layer potatoes, sauce, cheese mixture and ham in 4 equal layers. Sprinkle top with parsley and cover with foil. Cook for 45 minutes covered. Remove foil, reduce heat to 375 and cook an additional 45 minutes. Allow to stand 15 minutes before serving.
