Peaches And Cream Tart With Crumb Topping
- 1 1/4 cup flour
- 1 stick unsalted butter, softened
- 2 T. sour cream
- 1/4 t. salt
- 1 T. cornmeal
- 1/2 t. cinnamon
- 7 peaches, thickly sliced
- 4 egg yolks
- 3/4 cup sour cream
- 3/4 cup sugar
- 1/4 cup flour
- 1 t. vanilla
- 1/4 cup brown sugar
- 1/4 cup ground hazelnuts, pecans or walnuts
- 1/2 t. cinnamon
- 3 T. cold butter
- Preheat oven to 375 degrees.
- Make crust:
- Combine first 6 ingredients in food processor and pulse until a ball of dough forms. Roll dough into a disk and press into a tart pan. Bake for 15 minutes until slightly golden brown.
- Make filling:
- Combine egg yolks through vanilla in bowl. Place sliced peaches in the baked crust and pour the filling mixture over them.
- Make topping:
- Combine the last 4 ingredients in a food processor and pulse until thoroughly combined. Sprinkle evenly over the top of tart.
- Bake tart for one hour. Cool before slicing.
