Tex Mex Wings With Pico De Gallo
- 3 lbs chicken wings
- Marinade
- 1 12 oz can of beer
- 1/4 cup cider vinegar
- 2 tbsps chili powder
- 2 tbsps packed brown sugar
- 2 tbsps molasses
- 2 tbsps ketchup or chili sauce
- 1 tbsp Dijon
- 1 tsp veg oil
- 1 garlic clove minced
- 1/2 tsp salt
- Pico:
- 1 1/2 cups black beans
- 2 plum tomatoes diced
- 1 diced small onion
- 1 minced garlic clove
- 1 tbsp minced fresh cilantro
- 1 tsp cider vinegar
- 1 tsp veg oil
- salt
- 1. Mix marinade ingredients. Marinate chicken in plastic bag for several hours or overnight.
- 2. Grill chicken. Brush with warm leftover marinade.
- 3. Mix pico de gallo and serve with wings.
