Frittata

  1. Heat oil in large frying pan or Dutch oven.
  2. Add vegetables, mushrooms, garlic and bell pepper.
  3. Stir, cover and cook for 3 minutes.
  4. In a bowl, combine meat, eggs, salt and pepper and cheese.
  5. Stir into the vegetable mixture.
  6. Pour into a 3-quart casserole dish and bake for 20 minutes at 350u0b0.
  7. Top with Parmesan cheese and bake for 5 minutes longer.
  8. Yield: 4 to 5 servings.
