Frittata
- 3 Tbsp. olive oil
- 1 1/2 c. cooked broccoli or any leftover vegetables
- 1/3 lb. mushrooms, sliced
- 1 clove garlic, minced
- 1/2 bell pepper, diced
- 1/2 lb. leftover meat, cubed (chicken, turkey, ham, beef)
- 6 eggs, beaten
- 1/2 tsp. pepper
- salt to taste
- 1 1/2 c. shredded cheese (Cheddar, Swiss any kind)
- 1/4 c. freshly grated Parmesan cheese
- Heat oil in large frying pan or Dutch oven.
- Add vegetables, mushrooms, garlic and bell pepper.
- Stir, cover and cook for 3 minutes.
- In a bowl, combine meat, eggs, salt and pepper and cheese.
- Stir into the vegetable mixture.
- Pour into a 3-quart casserole dish and bake for 20 minutes at 350u0b0.
- Top with Parmesan cheese and bake for 5 minutes longer.
- Yield: 4 to 5 servings.
