Carrot Tahini Condiment
- 2 cups roasted carrots
- 1 1/2 cups water
- 1/2 cup olive oil
- the juice of half a lemon
- 2 teaspoons of sesame tahini
- 1 small clove of garlic, peeled and lightly smashed under a knife
- a pinch of hot pepper
- Salt
- Place carrots, water, olive oil, lemon, tahini and garlic into a blender or food processor. Blend until completely smooth, stopping the blender or food processor occasionally to scrape down the sides. Season to taste with salt, hot pepper and more lemon juice or olive oil as needed. The texture should be creamy and voluptuous like a hummus. Thin with more water if necessary.
- Note: To roast carrots, slice them in half lengthwise, toss with olive oil and salt, and roast at 400 degrees on a rimmed sheet pan for about 20-30 minutes or until tender.
