Pea Soup With Mock Chicken
- 400 grams dried yellow split peas
- 200 grams Yves Veggie Ground Round Chicken (about 2/3 of a package) or similar substitute.
- 2 cups vegetable broth (from bouillon cube or package)
- 1/2 teaspoon dry hot red pepper flakes
- 2 teaspoons extra virgin olive oil.
- 1/4 cup chopped onion
- In a large pot, combine split peas with 6 cups lightly salted water and bring to a boil. Reduce heat to medium and simmer, stirring occasionally until most of the water is gone and peas are soft. about 1 hour.
- In a medium saucepan combine vegetable broth with chopped onions, olive oil, red pepper flakes and ground pepper. Bring to a boil and immediately reduce heat to medium-low. Cover, and simmer for 8 minutes.
- Stir Ground Round Chicken into peas until all large lumps are gone and it is evenly distributed.
- Slowly stir the hot broth into the peas. Add less broth for a thicker soup.
- Salt and pepper to taste.
- Serve immediately.
