Rosemary Cheese Damper

  1. Sift flour, salt and sugar ina bowl, rub in butter, and stir in the rind, rosemary and cheese. Stir in enough milk to form a sticky dough, and turn onto a floured bench and knead until smooth.
  2. Place on a greased tray and shape to 24cm round, score the dough into 8 portions cutting 1cm deep. Brush with milk and sprinkle with combined salt, pepper and rosemary.
  3. Bake at 200 degrees for 35 mins or until dough sounds hollow when tapped.
  4. Serve with butter.
