Rosemary Cheese Damper
- 4 cups of self raising flour,
- 1 teaspoon of salt,
- 2 teaspoons of sugar,
- 50 g of butter,
- 2teaspoons of finely grated lemon rind,
- 1 tablespoon of fresh choppes rosemary,
- 3/4 cup of grated parmesan cheese,
- 2- 2 1/4 cups of milk,
- 2 teaspoons of cracked pepper,
- 2 teaspoons of salt,
- extra tablespoon of rosemary,
- butter to serve.
- Sift flour, salt and sugar ina bowl, rub in butter, and stir in the rind, rosemary and cheese. Stir in enough milk to form a sticky dough, and turn onto a floured bench and knead until smooth.
- Place on a greased tray and shape to 24cm round, score the dough into 8 portions cutting 1cm deep. Brush with milk and sprinkle with combined salt, pepper and rosemary.
- Bake at 200 degrees for 35 mins or until dough sounds hollow when tapped.
- Serve with butter.
