- Ingredients
- 1 1/2 Boneless, skinless chicken thighs and breasts cut into small pieces.
- 2 T Canola oil
- 2 large garlic gloves, minced
- 4 tsp pure chili powder
- 1 T ground cumin
- 2 tsp dried oregano
- 3-5 cups chicken broth
- 1 can petite diced tomatoes with their juice
- 2 jalapeno peppers, seed and ribs removed and chopped
- salt/pepper
- 2 15 oz cans black beans drained and rinsed
- 1 15 oz can pinto or red beans drained and rinsed
- 1/3 cup chopped cilantro
- lime wedges and hot sauce for serving

- In a large saucepan heat oil. Add onion (onion not listed above I just chopped up one) and garlic over moderately low heat until barely tender.
- Add chicken and cook until no longer pink; about 3 minutes. Stir in chili powder/cumin/oregano. Add broth, tomatoes with their juice and jalapeno's. Season with salt and pepper.
- Cover and bring to a boil.
- Stir in beans. Simmer, uncovered over moderately low heat until thickened, about 15 minutes longer. Once desired thickness add cilantro. Serve with additional cilantro, lime wedges and hot sauce on the side.
