Orange Poppyseed Cake
- 2 3/4 cups sugar
- 1 cup vegetable oil
- 3 eggs, lg or xlg
- 1 1/2 tsp. vanilla
- 1 tsp almond extract
- 3 cups flour
- 1 1/2 tsps baking powder
- 1/2 tsp salt
- 2 Tbsps poppyseeds
- 1 1/2 cups whole milk
- 1 tsp. orange zest
- GLAZE
- 1 cup confectioner's sugar
- 1/4 cup orange juice
- 1/4 tsp almond extract
- Oven at 350. Grease Bundt pan.
- Combine flour, baking powder, salt and poppyseeds in large bowl. Set aside.
- Cream sugar and oil together.
- Add eggs one at a time, beating well after each addition.
- Add flavorings and zest.
- Add dry ingredients
- alternately with milk, beginning and ending with flour.
- Batter will be very loose.
- Pour into prepared pan, and bake l hour 15 min. or until tester comes out clean.
- Cool in pan until just warm.
- Make glaze by whisking all ingredients together.
- Brush glaze on warm cake until absorbed.
