Crawfish Stuffed Peppers

  1. Heat oven to 350 degrees F
  2. Remove tops, seeds & membranes from peppers. Rinse with water. Bring a large pot of water to a boil; add peppers & boil 3 minutes; drain. Saute onions & celery in butter until vegetables are tender. Remove from heat. In a large mixing bowl, combine sauteed vegetables, rice, crawfish, cayenne pepper, mustard, salt & red hot sauce, if desired. Top with bacon. Place in buttered baking dish 20-25 minutes until bacon is cooked. Remove from oven. Let stand 5 minutes before serving.
