Fat-Free Banana Muffins
- 1 c. whole wheat flour
- 1/2 c. white flour
- 1/4 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 2 egg whites
- 1 c. ripe bananas, mashed
- 1/3 c. skim milk
- 1/3 c. corn syrup
- Spray muffin cups with nonstick cooking spray.
- Combine flours, sugar, baking powder, baking soda, salt and cinnamon and stir thoroughly.
- In a large bowl, beat egg whites lightly with a wire whisk or fork.
- Stir in mashed banana, milk and corn syrup.
- Add flour mixture and stir until well blended.
- Spoon into prepared muffin cups.
- Bake at 400u0b0 for 20 to 25 minutes or until firm to touch.
- Cool in pan for 5 minutes, then remove and cool on a wire rack.
- Makes 12 muffins.
