Fast Southwest Sausage Stew
- 1 medium onion, diced
- 2 gloves garlic, crushed or diced
- 1/4 cup olive oil
- 1 1/2 pounds chorizo or hot Italian sausage
- 2 large cans sliced mushrooms
- 1 32oz bottle of medium salsa
- 2 cans green beans
- 1 can red kidney beans
- Tortilla or corn chips
- In large stock pot, saute olive oil, garlic and onion over medium high heat approximately 5-7 minutes. Remove sausage from casings and add to pot. Reduce heat to medium. Sautee sausage until thoroughly cooked, about 10 minutes, making sure to stir vigorously to break sausage into small pieces.
- When sausage is cooked through add all other ingredients. Reduce heat to low and cook until stew is heated. Serve with crumbled tortilla or corn chips, if desired.
