Chicken Fajitas
- 1 pkg (10count)soft taco wraps
- 1 1/2# diced raw ckicken
- 1 med onion, med dice
- 1 red and green pepper, med dice
- 2 carrots peeled and med dice
- 1 zucchini and yellow squash
- -med dice
- cilantro 1 1/2 tsp. dried- or
- 4 tsp. fresh cilantro
- barbeque sauce -8 oz.
- (your favorite brand)
- oil for sauteing
- salt ,pepper, cayenne pepper
- shredded cheese, Monterey, Cheddar,or Taco Blend
- saute onions, peppers and
- carrots until somewhat softened. add squashes and cook just unil squash begins to soften-(not too much,you do not want mushy squash.) remove from pan. cook ckicken in same pan with a bit of oil. when chicken is almost cooked, add barbeque sauce and finish cooking poultry. Return vegetables to pan, reheat and make sure chicken is thoroughly cooked. Add cilantro, adjust seasonings- salt pepper,cayenne. Warm wraps in a dry saute pan, or in the oven, or in microwave. (20 seconds on high heat 1000 watt oven.) place about 1/3 cup mixture in your warm tortilla, add cheese, roll up and enjoy!
