Cheesecake
- Pie crust:
- 1.25 cup crushed grahm crackers
- 1/4 cup crushed walnuts
- 1/2 teaspoon cinnamon
- 1/2 cup melted butter
- Filling:
- 24 oz cream cheese (3 packages)
- 1 cup sugar
- 2 tablespoons flour
- 1 teaspoon vanilla
- 1/2 teaspoon shredded orange peel (optional)
- 2 eggs
- 1 egg yolk
- 1/4 cup milk
- Preheat oven to 375.
- Crust:
- Mix grahm crackers, nuts and cinnamon. Stir in the butter. Add water to get to a sticky consistency that will stick to the bottom and sides of a springform pan (8 or 9 inches in circumfrance)
- Filling:
- Beat the cream cheese, sugar, flour, vanilla, and orange pell on medium-high with an electric mixer.
- Add the eggs and yolk. Mix on low speed. Slowly add the milk until its all mixed in.
- Bake for 45 minutes (8 inch) or 35 minutes (9 inch) until the center in nearly set.
- Cool in the springform on rack for 15 minutes. Loosen the sides with a spatula and let cool for another 30 minutes in the springform. Place in fridge and chill for another 4 hours.
