Asian Scramble
- olive oil
- 1 large shallot, sliced
- 3-4 cloves garlic, minced
- 4-6 oz sliced crimini mushrooms, chopped more
- 1/2 bunch kale, julienned
- 4-6 oz mung beans sprouts
- 3-4 green onions, sliced
- 5 eggs, beaten
- soy sauce
- Heat some olive oil in a large skillet.
- Saute the shallots until softened
- Add the garlic and saute another minute or so
- Add the mushrooms, and saute until softened and a little browned
- Add a little soy sauce to season
- Add the kale and saute until bright green and softened a bit
- Add the sprouts, and saute until translucent
- Season the eggs with white pepper and soy
- Add to skillet and stir until cooked
- Next time try a sauce made with:
- 1 Tbs oyster sauce, 1 tsp vinegar, 1 Tbs. soy sauce and 1 tsp. sesame oil.
