Date Pinwheel Cookies
- DOUGH:
- 1 cup shortening
- 2 cups brown sugar
- 3 eggs, well beaten
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 3 1/2 cups flour
- 1 teaspoon vanilla
- FILLING:
- 2 1/2 cups chopped dates
- 1 cup white sugar
- 1 cup water
- 1 cup nut meats
- DOUGH:
- Cream butter and sugar together. Blend in eggs, then add the dry ingredients.
- Refrigerate for 1 hour. Divide into 2 parts. Roll each portion into a 1/4" thick rectangle.
- FILLING:
- Cook all ingredients together, adding nuts last. Cool, then spread on dough. Roll in jelly roll fashion.
- Refrigerate rolls for 2 hours, then slice and bake on a greased pan.
- Allow cookies to cool for a few minutes, then remove them before they harden and stick to the pan.
