Baked Cheese Torte
- 26 graham crackers
- 1 1/4 c. sugar
- 1/3 c. butter
- 4 eggs
- 1/8 tsp. salt
- 2 tsp. lemon juice
- 1 1/2 tsp. grated lemon rind
- 1 1/4 c. milk
- 1 lb. Baker's cheese
- 1 lb. cottage cheese
- 4 Tbsp. flour
- Mix crushed graham crackers with 1/4 cup sugar and 1/3 cup butter.
- Set aside 3/4 cup to sprinkle over top.
- Press remainder of crumbs into 10-inch spring-form pan, lining bottom and sides. Beat eggs and 1 cup sugar until light; add salt, lemon juice and rind, milk, cheese and flour and beat.
- Put cottage cheese through potato ricer so it is smooth.
- Pour into lined pan.
- Sprinkle remaining crumbs on top.
- Bake at 350u0b0 for 1 hour or until center is set.
- Turn off heat.
- Let cool in oven 1 hour with door open.
