Chicken Fettucine Alfredo
- 1 Tbsp. margarine
- 2 small cloves garlic, minced
- 1 Tbsp. flour
- 1 1/3 c. milk
- 2 Tbsp. cream cheese
- 1 1/4 c. freshly grated parmesan cheese, divided
- 4 c. cooked fettucini (cooked without salt)
- 1 tsp. chopped fresh parsley, optional
- 2 c. chicken, cooked
- Saute garlic in margarine, then stir in flour.
- Gradually add milk, stirring with a wire whisk until blended.
- Cook mixture 8 minutes or until thick.
- Stir in cream cheese and cook 2 more minutes.
- Add 1 cup parmesan cheese, stirring until melted.
- Cook fettucini according to package directions; add chicken.
- Pour the hot cheese sauce over the hot fettucini and chicken.
- Toss well to coat.
- Top mixture with the remaining 1/4 cup of parmesan cheese and sprinkle on some black pepper.
