Homemade Tomato Vodka Yummy Pasta
- olive oil to coat the bottom of the saucepan
- 3 cloves of garlic
- 1/2 of a medium onion (or more if you like)
- 1 c strong veggie broth (Pacific Organic is good if you can get it)
- 1 c heavy whipping cream
- 1 c warm water
- 1 can of "Italian" seasoned diced tomatoes (basil, garlic, oregano)
- 1 large serving spoon full of good vodka (or about 2 shots, I used Three Olives)
- 1 pound of pasta (I used linguini, but penne might have been better)
- heat up a big saucepan with enough olive oil to coat the bottom, while heating the pan, dice the onion and garlics and then saute until the onions are soft (translucent) and the garlic is toasty.
- before the onions start to brown add all the liquids and the can of tomatoes
- let simmer for about an hour (or down to about 1/2 the original volume)
- while the sauce is simmering get the water boiling and time the pasta so that they're all done at the same time
- drain the pasta and put it back in its pot. pour the sauce over top of the pasta and toss well
- serve topped with freshly ground pepper and grated parmesan
