Sunny Summer Kebobs
- 1/2 butternut squash, cubed
- 3 zucchini, cut into wheels
- 3 small onions, quartered
- 1/2 large green bell pepper, seeded and cut into 2'' x 2'' sections
- 3 large carrots, peeled and cut into 1'' sections
- 3 banana peppers, seeded and cut into sections
- Grape tomato for each kebob
- Olive oil
- Salt and Pepper
- Old Bay Seasoning
- 6 wooden skewers, soaked in water
- Wash all vegetables. Peel the butternut squash, seed, cut into 2'' cubes. Place in microwave bowl and cook for 5 minutes, stirring half-way through. Cool.
- Prepare the vegetables. Cut into skewer friendly sizes. Put all the vegetables in a bowl including the cooled squash.
- Mis together 1/4 c olive oil, 2 T balsamic vinegar, 1 teaspoon Old Bay seasoning, salt and pepper to taste, Pour over vegetables to marinate while you start the grill.
- Grill over hot coals watching that the kebobs do not burn. Should take 20 minutes or less until the kebobs are ready.
- Can make these with any seasonal vegetables.
