Pumpkin Loaf
- 3 1/2 cups of all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tbsp ground cinnamon
- 1 tbsp ground nutmeg
- 2 tsp cardamom (optional, but awesome
- 2 1/2 cups sugar
- 4 large eggs
- 1 cup canola oil
- 1 15 oz can of pumpkin (2 cups)
- 1/2 cup water
- 2 tsp vanilla extract
- 1. Preheat oven to 350 degrees.
- 2. Grease and flour 2 9 by 5 inch loaf pans.
- 3. Sift together flour, baking powder and soda, and spices in a bowl and set aside.
- 4. In a separate bowl, whisk together sugar, eggs, and oil. Stir in the pumpkin, water, and vanilla. Mix well.
- 5. Add the dry ingredients to the wet and stir until everything is just blended. Don't overmix.
- 6. Pur batter into the pans and bake for about an hour or until a toothpick comes out clean.
- 7. Let cool for about 15 minutes before removing fromt he pans.
- 8. When cool, wrap tightly in foil and refrigerate.
