Pumpkin Loaf

  1. 1. Preheat oven to 350 degrees.
  2. 2. Grease and flour 2 9 by 5 inch loaf pans.
  3. 3. Sift together flour, baking powder and soda, and spices in a bowl and set aside.
  4. 4. In a separate bowl, whisk together sugar, eggs, and oil. Stir in the pumpkin, water, and vanilla. Mix well.
  5. 5. Add the dry ingredients to the wet and stir until everything is just blended. Don't overmix.
  6. 6. Pur batter into the pans and bake for about an hour or until a toothpick comes out clean.
  7. 7. Let cool for about 15 minutes before removing fromt he pans.
  8. 8. When cool, wrap tightly in foil and refrigerate.
