Rosalie'S Bean Soup
- a few lbs of beef(chuck)
- carrots
- potatoes
- 2 bags of red kidney beans
- 2 bags of white beans
- 1 bag carrots( 8-9 large )
- 5 boxs chicken broth
- 4 large cans crushed tomaotes
- 1 bag lima beans
- 1/2 cup barley
- veggies( any root veggies)
- 2-3 lbs of potatoes
- 2-3 spicy sausage.
- add all the boxes of chicken broth and the cans of tomatoes to the pot . add water to each can of tomatoes about 1/2 can of water with each can of tomatoes. add all the beans that have soaked overnight to the pot.
- dice veggies small.
- add all ingredients to the pot and after it starts to boil ...add the beef broth and cut up meat.
- take the sausage out of the casings and saute with a litle olive oil. break up into small pieces and add to soup
- cook the soup uncovered for a few hours. the beans need to be soft.
