Roasted Pork Loin With Calvadoscreme & Potatoe
- 1 3/4 lb pork loin
- 2 red delicious apples cored and chopped
- 2 oz calvados
- 1 tsp garlic
- 2 Tbs butter
- 2 large leeks
- 3 Tbs honey
- 12-15 Red Bliss potatoes
- 1 cup heavy cream
- 1 tsp olive oil
- salt and pepper
- Rub Pork loin with S&P Roast in slow oven for 2 hrs @275degrees or until reaches 138 on thermometer,Rest until service. Cut potatoes in 1/2 toss with garlic and olive oil roast at 275 degrees for 45 min or until soft,hold. In a large skillet saute leeks in butter until soft.Add apple,honey and brandy (will Flame),cook 4-6 minor until reduced by half,Add cream cook 4-6 min or until sauce reaches desired consistancy. Slice pork ,serve sauce over pork, potatoes to side :reccomend green beans with toated almonds as additional side.
