Sweet And Sour Pork
- 1 (8 oz.) can pineapple chunks (juice pack)
- 1 lb. lean boneless pork
- 2 Tbsp. cornstarch
- 1 c. chicken broth
- 1/4 c. red wine vinegar
- 2 Tbsp. brown sugar
- 2 Tbsp. low sodium soy sauce
- 1 Tbsp. peanut oil
- 1 clove garlic, minced
- 1 medium onion, chopped
- 1 large green bell pepper, cut into 1-inch pieces
- 1/2 c. diced celery
- 1 medium carrot, very thinly bias sliced
- 3 c. boiled rice
- Drain pineapple chunks, reserving 1/3 cup juice.
- Set pineapple chunks and juice aside.
- Cut pork into 1/2-inch cubes. Set aside.
- Combine reserved pineapple juice and cornstarch; stir in chicken broth, red wine vinegar, brown sugar and soy sauce; set aside.
