Arugula Salad With Lemon-Garlic Dressing
- Salad:
- 4 cups fresh baby arugula leaves
- 2 cups fresh baby salad greens
- 1 cup grape or cherry tomatoes
- 1/2 cup shaved or shredded fresh parmesan cheese
- Lemon-Garlic Dressing
- 1 clove garlic minced
- 6 Tsp olive oil
- 4 Tsp fresh lemon juice
- 2 tsp spicy Dijon mustard
- 1/2 sea salt
- 1/4 fresh ground black pepper
- Combine fresh baby greens and arugula in a large salad dish.
- Slice grape tomatoes in halves and gently mix with greens.
- Just before serving pour Lemon-Garlic Dressing over top of salad and toss lightly.
- Sprinkle shaved parmesan cheese over top to garnish.
