Sicilian-Style Fish With Pasta And Greens

  1. Mix onions, pine nuts, and raisins together and place in a caserole dish. Lay fish filets on top. Mix salt, pepper, italian seasoning, olive oil, 1/4 cup fish stock, and red wine vinegar together and pour over fish. Cover and marinate for two - five hours.
  2. Remove fish from marinade and pan fry in a splash of light olive oil over medium heat about two minutes each side.
  3. Meanwhile, in a separate pan over medium-high heat, saute garlic slices in a splash of olive oil for 30 seconds, stirring, then add the second 1/4 cup of fish stock and the greens. Cover, reduce heat to medium and let greens wilt.
  4. After frying fish on second side for two minutes, add marinated onions, pine nuts, and raisins to pan (reserving marinade) and saute on medium-high heat for 3 minutes. Add reserved marinade and simmer for 5 minutes.
  5. Put warm pasta in four warmed pasta bowls. Add equal portions of wilted greens on top of pasta. Place one fish filet on top of each portion of wilted greens, top fish with onion mixture, and pour remaining juices over each bowl. Grind a little black pepper over each dish and serve.
