White Bean Chicken Chili
- 2T vege oil
- 1 lb diced cooked chicken meat
- 1 chopped onion
- 2 cloves garlic, minced
- 1 14.5 oz can chicken broth
- 18.75 oz can tomatillos, drained and chopped
- 1 16 oz can diced tomatoes
- 1 7 oz can diced green chiles
- 1/2 tsp dried oregano
- 1/2 tsp ground coriander seed
- 1/4 tsp ground cumin
- 1 15 oz can white beans
- 2 ears corn or one can
- salt to taste
- pepper to taste
- Heat oil and cook onion and garlic until soft.
- Stir in broth, tomatillos, tomatoes, chilis and spices. Bring to a boil, simmer 10 min.
- Add corn, chicken and beans, simmer 5 minutes. Season with walt and pepper to taste.
- Serve with toppings
