Grits And Cheese
- 1-1/2 cups white grits
- 6 cups water (do not add salt to the water)
- 3 beaten eggs
- 1 stick unsalted butter
- 1/2 lb grated longhorn cheese
- 1/2 lb grated sharp cheddar cheese
- 1 tsp season salt
- dash tabasco
- dash paprika
- Prepare eggs, buter and cheeses and have ready for quick combining
- Bring water to boil and add grits slowly. Cook until done.
- Add salt and tabasco. Immediately add eggs, butter, longhorn and chedder cheeses to the hot grits. Stir until egg, butter and cheese are well combined.
- Pour mixture into a lage baking dish (pre-buttered. Sprinkle with Paprika.
- Bake at 250 degrees 1 to 1-1/2 hours depending on the depth of baking dish or until lightly brown and puffy all over top. Good with fish.
