Cheddar Broccoli Soup

  1. In a saucepan, saute the onion in butter until tender.
  2. Stir in flour, salt and pepper; cook and stir until smooth and bubbly. Add broth and milk all at once; cook and stir until the mixture boils and thickens. Add broccoli & shredded carrot. Simmer, stirring constantly, until heated through. Add nutmeg, cayenne, pepper garlic powder. Remove from the heat and stir in cheese until melted.
  3. Note: for soft broccoli steam it ahead of time.
