Cheddar Broccoli Soup
- 1 medium onion, grated with large holes of grater
- 1 cup butter
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 cups chicken broth
- 6 cups whole milk
- 4 cups broccoli, chopped small
- 1 carrot, shredded
- 4 cups extra sharp cheddar cheese, grated
- a dash of nutmeg
- a dash of cayenne powder
- a dash of garlic powder
- In a saucepan, saute the onion in butter until tender.
- Stir in flour, salt and pepper; cook and stir until smooth and bubbly. Add broth and milk all at once; cook and stir until the mixture boils and thickens. Add broccoli & shredded carrot. Simmer, stirring constantly, until heated through. Add nutmeg, cayenne, pepper garlic powder. Remove from the heat and stir in cheese until melted.
- Note: for soft broccoli steam it ahead of time.
