Apple Cookies
- 1/4 cup white sugar
- 1-cup brown sugar
- 3/4 cup butter (1 1/2 sticks)
- 1 egg
- 1/2 teaspoon vanilla
- 1 1/2 all-purpose flour
- 1-teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 plus 1/4 cup old-fashioned rolled oats
- 1 1/2 cups apple peeled and cored and finely
- Chopped
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 3/4 cup applesauce (cinnamon flavor)
- 1 cup chopped nuts
- Preheat oven 300F.
- Sift flour, baking soda, salt, cinnamon, and nutmeg. Stir in oats.
- Cream butter and sugars. Scrape down sides. Add in egg and vanilla. Mix in apples and applesauce. Mix well.
- Gradually mix in flour mixture. DO NOT OVER MIX. Fold in nuts.
- Drop rounded tablespoonful onto an ungreased cookie sheet 1-1/2 inches apart. Sprinkle top of each cookie with reserved 1/4 cup oats. Bake 23-25 minutes or till bottoms are golden. Transfer immediately.
