30 Min. Lentil Soup

  1. Bring chicken broth, water, red lentils, and salt to a boil, covered in a large sauce pan. Reduce to a simmer.
  2. Meanwhile, saute olive oil and onion. Add garlic, ginger, and garam masala and cook til done. Add onion mixture to cooked lentils and simmer about 10 minutes.
  3. Add minced cilantro and coconut milk and continue cooking about 10 minutes.
  4. Garnish with fresh diced tomato (and olive oil and lime juice, if desired).
