30 Min. Lentil Soup
- 4 c chicken broth
- 2 c water
- 2 c split red lentils
- salt
- 1 T olive oil
- 1 onion, chopped (1 cup)
- 4 garlic cloves, minced
- 1 T grated fresh ginger
- 1 1/2 tsp garam masala
- 1/2 c minced cilantro
- 1 (14 oz) can light coconut milk
- pepper to taste
- 1 plum tomato, seeded & chopped
- fresh lime juice, if desired
- Bring chicken broth, water, red lentils, and salt to a boil, covered in a large sauce pan. Reduce to a simmer.
- Meanwhile, saute olive oil and onion. Add garlic, ginger, and garam masala and cook til done. Add onion mixture to cooked lentils and simmer about 10 minutes.
- Add minced cilantro and coconut milk and continue cooking about 10 minutes.
- Garnish with fresh diced tomato (and olive oil and lime juice, if desired).
