Pork Fried Rice
- vegetable oil for sauteing
- 1 large onion chopped
- 1 1/2 tablespoons minced fresh ginger
- 4 cloves garlic minced
- 4 eggs lightly heated
- 1 cup frozen green peas
- 1/4 dark soy sauce (switch over light soy when adjusting to taste)
- 1 1/2 pounds pork cut into 1/2 " pieces
- 8 cups cooked white rice
- 1 cup sliced scallions
- sweet thai chili sauce for serving
- Put about 3 tablespoons of oil in a wok and heat it on medium high until it begins to shimmer.
- Add the onions and saute for 2-3 minutes allowing them to soften. Turn the heat down when they start to brown. Add the garlic and ginger being careful not to scorch. Add more oil if
- that happens.
- Stir and begin to move mixture to one side of pan, leaving room to pour in the eggs. But first, a little more oil. When the oil heats to cooking temp, pour the eggs into it and let sit for a few seconds before stirring. Quickly start scrambling and then toss with the onions. Now add the rice,
- folding it gently into the mix. Season with soy sauce. Add the peas and toss. Now add the pork and allow everything to heat up, while mixing everything together. When you're ready to serve it
- garnish scallions. Thai Chili Sauce on the side.
